Michelin-starred restaurant Torno Subito is set to welcome a brand new chef de cuisine at W Dubai, The Palm’s hugely popular Italian dining destination. Gourmets, make way for the famous starred chef Alessio Pirozzi.
This new appointment comes as current Torno Subito Chef de Cuisine, Bernardo Paladini, moves to Miami, to lead an exciting new project: Torno Subito’s second location. Commenting on his move to Miami, Bernardo said: “What an amazing journey it has been at Torno Subito Dubai, I feel so much love. Like our leader, Massimo Bottura always says “we must project the best of our past into the future. So now it’s time for the next chapter. I feel so blessed as a bright future is already being built and it’s amazing to see our family continue to grow as Alessio joins the amazing team in Dubai. I’ll see you in Miami!
Alessio Pirozzi joins the culinary team in Dubai with a wealth of experience, having worked in some of Italy’s top gastronomic establishments. Born and raised in Italy, Alessio always dreamed of becoming a chef, thanks to his childhood memories of watching his grandmother cook, as he sat beside the stove enjoying various Italian dishes she created. This tender early introduction to food eventually led Alessio to continue his studies in hospitality and he attended a top culinary boarding school in Villa Santa Maria, a town well known for being the patron saint of cooks.
After successfully graduating, Alessio’s outstanding career began at the Mirage Hotel in Cortina d’Ampezzo, located in the Italian Dolomites. After a stint of three years, he then perfected his gastronomic know-how alongside the legendary Norbert Niederlkofler. At the Rosa Alpina Hotel, his experience opened his eyes to high-level restaurants and world-famous Michelin stars, and it was there that he realized he wanted to continue working at that level.
Alessio found his way out of Italy starting with Germany, Spain and then the UK moving from independent restaurants to hotel chains such as the Dorchester Hotel in Park Lane London with Alain Ducasse at the independent restaurant It-Ibiza, with Gennaro Esposito, showing how he acquired his culinary knowledge before leaving Europe for China.
Alessio quickly reached the pinnacle of his career when he had the opportunity to gain excellent first-hand experience at the Italian restaurant – Mio at the Four Seasons in Beijing. As sous chef, Alessio helped the restaurant achieve its first Michelin star in 2019 and maintained it for the next two years while being in charge of the kitchen and achieving excellent results.
Commenting on his appointment, chef Alessio Pirozzi said: “I am delighted to join the Torno Subito team at W Dubai – The Palm. It’s an incredibly exciting time for the city and its thriving culinary scene, which has earned a phenomenal reputation on the world stage. We will continue to build on the legacy that Chef Bernardo started.
Commenting on the news, Massimo said: “I am very proud that Torno Subito Dubai has received its first Michelin star this year. But, as I often say, in our future there is always more to come. And it’s already time for the next adventure. I am delighted to welcome Alessio to the Torno Subito family and have no doubt that he will do an incredible job leading the kitchen team in Dubai. I’m even more excited to see Bernardo continue to grow with the family, which will see him bring Torno Subito to Miami!
